Apple and Cinnamon Loaf

see I’m a real sucker for Christmasy flavors and scents and I often create combinations, which could be mistaken for something that belongs to a Christmas table, when in facts it’s the middle of summer. I just love the mix of various spices, like cinnamon, cardamom, ginger and clove, especially when you use them with apples.

Apple and Cinnamon Loaf

300 gr unsweetened apple purée
3 tbsp coconut oil
3 tbsp honey
2 tsp cinnamon
2 dl rolled oats
2 dl buckwheat flour
2 large eggs
1,5 tsp baking powder
pinch of salt

Preheat the oven to 175 C.

Start by melting the coconut oil in a small saucepan. Once the coconut oil has become liquid, add the honey and cinnamon and mix together. Put 300 grams of apple purée into a mixing bowl and add the coconut oil mixture in with it. Mix everything together. Then go ahead and put in the oats, buckwheat flour, baking powder and salt. Mix everything thoroughly together. Once all the ingredients have combined together nicely, add the eggs, mixing them in using a spatula. You could even a use a whisk for this part, if you want.

Then take out a loaf tin and oil it with some coconut oil. Pour in the apple mixture and top it with a few slices of apple and sprinkle with some cinnamon. Put it in the preheated oven for 45 minutes. After 45 minutes, lower the temperature to 150 C. and bake for another 10 minutes. You can then try it with a fork or a tooth pick to see if it’s done. Let it cool for at least 30 minutes to an hour before you cut into it. Enjoy!
