Chocolate Tartlets with Cream Filling

Today marks week 15 for me and I’m still experiencing the worst morning sickness ever. I’ve had a very hard time eating, let alone cooking anything. Needless to say, it’s been a very difficult time. But I’m staying optimistic. This too shall pass, very soon I hope.

Today is a special day for me and my husband so I wanted to make something nice to mark the occasion (even if my stomach was not in full agreement with this desire of mine). But regardless of that, I did it. I created something new I’ve never tried before and they turned out great. These healthy gluten, dairy and sugar-free chocolate tartlets are such a delicious treat. They even work great as finger food.

1 large ripe banana
1 large apple
2 eggs
1,5 tbsp coconut oil
4 tbsp maple syrup
10 tbsp oat flour
4 tbsp raw cacao powder
2 tsp baking powder
hint of salt

For the cream filling:

1,5 dl cashews (soaked for 1-2 hours)
4 tbsp filtered water
1,5 tbsp maple syrup
1/2 tsp vanilla powder (unsweetened)

Preheat the oven to 160 C.

Start by placing the banana and peeled apple into a food processor and blend until smooth. Break in the eggs and add the coconut oil and continue blending for a few more minutes. In the meantime mix all dry ingredients together.

Once the fruit and egg mixture has blended thoroughly, pour it into a large bowl. Take a sift and fold the dry ingredients into the wet ingredients gently. Then take out your tartlet tins. Grease them with some coconut oil and start filling them up.

Put them into the preheated oven for 20-25 minutes (depends on the oven). Try them with a toothpick or fork to see if they are done. Once they are ready, let them cool completely before you add the cream filling.

To make the cream filling, place all of the ingredients into a food processor and blend until fully smooth. Add an even spoonful of the filling in between each tartlet and enjoy!
