Raw Lemon and Vanilla Coconut Balls

But now it’s been a while since the last time I made some. I somehow needed a break from them for a bit. But this weekend I felt like making a batch again. I didn’t want to follow my usual recipe but to rather change things around a bit in order to try something new and fresh.

The flavor combination of these three key ingredients reminds me of my childhood. Maybe it was a cake my mother or grandmother used to make. I don’t know. But in any case, I and my family are the biggest fans. I’m going to be making these more often from now on. This would also work great as raw cake base.

1 dl almonds
1 dl quick oats
1 dl dessicated coconut
1/3 tsp pure vanilla powder/ 1 medium vanilla pod (seeds)
6 large medjool dates
2 large dried apricots
1/2 lemon zest

buy nizoral Start by putting the almonds, oats and dessicated coconut into a food processor and blend until no big pieces remain. Add the dates and apricots and blend together. Then go on to adding the rest of the ingredients and blend until thoroughly mixed. The end result should be slightly sticky to the touch.

Then start rolling them into balls in the palm of your hand. Once all of them are done, place them into the freezer to set for about 30 minutes, after which put them in the fridge. These delicious little treats can be stored in an airtight container in the fridge for up to two weeks.
